Good carbs is fine, I guess It’s debatable what they are. I’d rather get my carbs from vegetables, even Sweet Potato is fine. Beans are high in phytates which interfere with absorption of vital minerals and nutrients and they are just hard for many people to digest properly. Soy products are high in phytoestrogens.
What research are you looking at? from the FDA or Dairy industry? Who have no interest in our health, just selling dairy and meat products. I study nutrition daily, I just finished Dr. Campbell’s book "Whole", Read the China Study, Diet for New America, Reversing Heart Disease by Dr. Bernard, and follow Dr. Essystein’s research along with many others. Dairy is extremely detrimental to your health. It causes diabetes, obesity, and many other diseases. The countries with the most dairy consumption have the most bone diseases and cancers. The only thing dairy is good for is a baby cow. Please don’t assume I have done no research.
This recipe calls for sprouted beans which should take care of the phytates.
