  • I made the Asian zing sauce and put it in a mason jar in the fridge for later use. However, later when I took it out it was very gooey with the same consistency as caramel. When warmed up, it was even harder and sticky. Anyone know why this happened?

    Kikkoman Sriracha Hot Chili Sauce, 10.6 oz

    1 jar strawberry preserves 12oz

    1/2 cup of strawberries boiled into 1/4 cup water with 3tbs sugar

    Mix sriracha sauce and preserves together and bring to boil, then put onto simmer.

    Meanwhile, mix strawberries, sugar and water in saucepan, boil for 5 minutes. Crush strawberries. Mix into sauce and bring to a boil.

    Stir and simmer until ready for use.

  • Dude. Here goes. The easy way. Add 1 tablespoon of cold water to 1 tablespoon of cornstarch. Whisk till it’s well whisked. Slowly whisk this mixture into the sauce and let simmer couple minutes. Repeat as needed. More appropriate, but more difficult, Use wine or fat or butter then add equal amount flour and whisk and simmer till its an even slurry. then add this to your sauce. Or even, pulverize some okra in blender, add to your sauce. Or, keep Filé powder on hand. Add sparingly, only if the spicy, earthy, flavor goes with your dish. Any more, out there?

  • Honey Bourbon Mustard Sauce
    1 cup honey
    1/2 cup bourbon
    1/2 cup grain mustard
    1 tablespoon worcestershire sauce
    2 teaspoons garlic powder
    1 teaspoon cornstarch (optional)

    Mix all ingredients except cornstarch in a pot. Bring to a simmer and reduce heat. Simmer for 20-30 minutes. If the sauce isn’t thick enough after 30 minutes, mix the cornstarch with 1 tablespoon of water and then mix it into the sauce. Bring the sauce back to a heavy simmer and then reduce heat to allow it to thicken.

  • Heat oil in a large skillet to 375 degrees F (190 degrees C). Deep fry chicken wings in oil until done, about 10 minutes. Remove chicken from skillet and drain on paper towels. You can use canola, vegetable, or peanut oil.

  • Way back someone asked for onion ring batter mix..mix 1 cup of regular beer and 1 cup of flour..wisk, cover, and let set at room temperature for 3 hours..batter rings and fry..perfect..the plain beers work best like Bud, Miller, etc. No lite beers.

    2 teaspoons vegetable oil
    1 4-ounce can or jar yellow curry paste
    3/4 pound carrots, peeled, cut into 1/2"-thick rounds
    1 medium onion, chopped
    1 red bell pepper, cut into 1" pieces
    1 pound Yukon Gold potatoes (about 3), peeled, cut into 1/2" pieces
    1 pound skinless, boneless chicken thighs, cut into 1" pieces
    1 13.5-ounce or 15-ounce can unsweetened coconut milk
    Chopped fresh basil and cilantro

    Heat oil in a large heavy pot over medium heat. Add curry paste and cook, stirring, until fragrant, about 1 minute. Add carrots, onion, and pepper and cook, stirring occasionally, until onion is translucent, about 10 minutes.
    Add potatoes, chicken, coconut milk, and 1 1/2 cups water and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until chicken is cooked through and potatoes are tender, about 20 minutes. Divide curry among bowls and top with herbs.

  • Jammin’ Jalapeno starter suggestions

    1 jar of Jalapeno jelly
    Fresh Jalapenos
    Salt and pepper
    1 small clove garlic, minced

    Cook in sauce pan shortly to marry flavours and soften Jalapenos. Let cool, then blend. Cook in sauce pan again until desired color and consistency. Play with the amounts of each ingredient. Hope this helps all of you forlorn Jammin’ Jalapeno lovers.

    Because all the ingredients are spices and liquids, you will only need to blend for a little while to incorporate everything. A low to medium speed should work for about 20-30 seconds. You can also Pulse until everything is incorporated.

  • I am from Norway, and found Buffalo Wild Wings when traveling to Canada earlier this year. I found this today and just had to have a go at the Mango Habanero.

    I used one fresh mango, that i pealed, chopped up and put in the blender Made for approximately 2 cups or 3 dl. I used Tabasco Buffalo (based on cayenne pepper) for the cayenne pepper sause, and Tabasco HOT for the habanero sauce, 15-20 drops. I used one tbsp of sugar. This made for some very orange stuff, that when put on my first ever attempt on deep frying chicken tasted AWESOME.

    Probably not like the original the way I made it, but it made for a mild hot sauce that was delicious. I will use 2,5dl of mango next time, and add a few drops of habanero sauce. Using it on burger next…

    1 cup melted butter.
    1 bottle Slim D’s BBQ sweet and spicy bbq sauce simmer for 20 minutes.

    Whisk during simmering until thickened.
