Blackberry Thyme Preserves Recipe

With so many uses this recipe will not be wasted. The sweet-herb flavor works well as a spread or even a chutney or over a soft cheese eaten with crackers.

Ingredients
- 3 cups blackberries
- 1 cup blueberries
- 1 cup honey
- 1 tsp. fresh thyme
- 1 pkg. powdered pectin

Instructions
- Add ingredients to FourSide or WildSide+ jar and secure lid. Select "Batters" or blend on Medium Low (speed 3 or 4) for 30 seconds.
- Good for up to three weeks, when stored in the fridge.

How can I make it a little bit thicker?
It is mostly for sweetness. The honey is a great natural sweetener and is a great replacement for sugar in jams and preserves. However, you can try eliminating it altogether and/or trying another sweetener in its place.
Is the honey for consistency or sweetness? Hubby wants to eliminate sugar as much as possible. Yesterday I just blended the blueberries with nothing added.
How long does this spread stay fresh and usable?
