Made this for my husband and I tonight, but I used a Serrano chili. It was great and filling! Even the kiddos loved it. Two thumbs up.
Shredded cheese and tortilla chips. Was phenomenal!!
I used fire roasted tomatoes(canned), added 1 whole carrot, a lot of cilantro. 1cup 1/2 water and 1/2 cup heavy cream.——-no wonder that I am totally addicted to this! I mean totally! it is to die for. the fire roasted tomatoes make the difference and the increase in the amount of cilantro.
Great idea…I thought about doing the same thing?
I made this and it was, of course, different than my usual tortilla soup. If you are accustomed to trying different ways of trying things and appreciating the goodness of a simple soup like this, it turned out good. I added additional tortilla soup seasonings, like chili powder, onion powder, black pepper, etc and pulsed in lots of beans and corn, a handful of tortilla chips and more cilantro. Although it came out good, and the pulsed in ingredients stayed suspended throughout the soup, it came out warm, so I zapped a bowl in the microwave and had a couple servings. This was definitely very filling a healthy meal compared to the alternatives. I had leftovers the next day, heated up in the microwave, and it was still very good.
