This deliciously light and tangy dressing is great on top of a bed of spinach with sliced strawberries, grapefruit sections, and roasted pecans.

Ingredients

  • 3/4 cup red grapefruit juice
  • 1 tbsp. olive oil
  • 1 tbsp. honey
  • 1 1/2 tsp. orange zest 2 (1"x 1") pieces
  • 1 1/2 tsp. grapefruit zest 2 (1"x 1") pieces
  • 2 frozen strawberries hulled
  • 1/2 tsp. ground mustard
  • 1/8 tsp. xanthan gum
  • 2 tsp. poppy seeds

Instructions

  1. Add grapefruit juice, oil, honey, orange zest, grapefruit zest, strawberries, and mustard to FourSide jar. Secure lid and select "Dressings."
  2. Remove vented lid insert, and add xanthan gum. Press "Pulse" 35 times or until dressing becomes slightly more viscous.
  3. Add poppy seeds, and press "Pulse" 23 times.
