Notes
For a vegan version of this soup, replace low-fat milk with ½ cup coconut milk.
Yes you could make it in the Blendtec. Simmering everything in the sauce pan just enhances all the flavors.
You can only liquefy veggies in something like a blender. Just chopping them will not liquefy them like the recipe calls for. The veggies are helping make the liquid part. You do need a blender to make this soup! You can not just simply chop the veggies.
This recipe is very disappointing. I can blend roasted veg in any blender. I expect Blendtec recipes to be unique to my Blendtec. Isn’t that why I spent hundreds of dollars on it? You are missing an additional marketing opportunity to set yourselves apart from traditional blenders. On top of that, you posted a soup recipe for a machine that HAS a soup button which is not utilized! If you can’t come up with one recipe a week unique to Bledtec, then I’m not sure why I have one sitting on my kitchen counter. Comments anyone??
Sounds yummy. Can’t wait to try it. Blendtec makes the creamiest soups!
"Soup: a liquid food especially with a meat, fish, or vegetable stock as a base and often containing pieces of solid food." …. If you hit the "soup" button on the Blendtec it doesn’t "chop" the veggies. It pulverizes them and heats them into SOUP.
