Ingredients

  • 1/4 cup half and half (half milk/half cream)
  • 3 oz. sweetened condensed milk
  • 1/2 tsp. vanilla extract
  • 1/3 cup fresh lemon juice
  • 1 tsp. lemon zest
  • 2 cups whole milk cubes (about 1 tray of frozen milk)

Instructions

  1. Add ingredients to jar in order listed and secure lid. Select Ice Cream cycle.

Note: If your Blendtec doesn’t feature an Ice Cream/Frozen Yogurt button, blend on a Low speed for 15 seconds, then blend on a Medium High speed for 30 seconds. If more blending is required, press pulse several times until desired texture is achieved.

    I made this tonight. I used a cup of raw, grass fed jersey organic whole milk frozen into ice cubes (really frozen, not just slushy) Then I left out the 1/2 and 1/2 (because my 50 something mind just forgets things sometimes, then I substituted 1/4 cup maple syrup for the sweetened condensed milk because I am trying to be cane sugar free. Then because I like lime better than lemon, I juiced 2 limes into the mix instead of a lemon. Then I used the "smoothie" button on my blendtec and it was almost good enough. Not quite the texture I wanted yet, so I blended it another 40 seconds on hi and voila! I had lime ice cream to die for. It was delicious and my husband loved it… though he thought of it more like sorbet than ice cream… kind of like the push up sticks we used to get as kids. Still he loved it and he loved knowing it didn’t have any cane sugar or artificial sweeteners. I think if I had remembered the 1/2 and 1/2 (or in my case, I was planning to add whipping cream instead of 1/2 and 1/2) it would have been more like ice cream than sorbet. Either way it was a big success at my dinner table tonight.
