These lemon-infused snacks are sweetened with dates and are mighty refreshing.

Ingredients

  • 1 1/2 cups raw cashews unsalted
  • 3 Medjool dates
  • 1 tsp. vanilla extract
  • 1 tbsp. fresh lemon juice
  • 1/2 tbsp. lemon zest approximately 1/2 lemon
  • 2 tbsp. dried blueberries

Instructions

  1. Add half of cashews, then the dates and then the rest of the cashews to the Twister jar. 
  2. "Pulse" 10-15 times. Turn Twister lid counter-clockwise during blending. 
  3. Add vanilla, lemon juice, lemon zest and dried blueberries to mixture. 
  4. "Pulse" 8-10 times. Turn Twister lid counter-clockwise during blending. 
  5. Shape into 1" balls and store in an airtight container in the fridge.

Notes

To make in WildSide+ or FourSide jar, follow the instructions below.

  1. Add half of cashews, vanilla, lemon juice and zest and secure lid.
  2. "Pulse" 6-8 times then scrape sides of jar back down to the blade.
  3. Add dates and secure lid.
  4. "Pulse" 2-3 times, scrape sides of jar back down to blade.
  5. Add the remaining cashews and secure lid.
  6. "Pulse" 4 times, scrape sides of jar back down to blade.
  7. "Pulse" 4 more times, scrape sides of jar back down to blade.
  8. Add blueberries and secure lid.
  9. "Pulse" 3-5 times.
  10. Shape into 1" balls and store in an airtight container in the fridge.

 

Dates blend better in the Twister jar. Another option that would help when blending in the WildSide+ or FourSide jar is to use date paste rather than raw dates.

    Great recipe. Had a little mishap though. I didn’t have Medjool dates so used 6 smaller pitted ones instead. Now it turns out one of them still had a pip in and it’s now broken up throughout the mixture. Should I throw it away or can I keep blending it with a bit more liquid until all the bits are pulverised?
