Glazed Lemon Bread

Ingredients
- 2 1/4 cups all-purpose flour
- 1/4 tsp. baking soda
- 3/4 cup buttermilk
- 3 large eggs
- 3 1/2 tbsp. fresh lemon juice
- 1 1/2 cups granulated sugar
- 1/4 tsp. kosher salt
- 2 cups powdered sugar
- 3/4 cup shortening
- Zest of 1 lemon

Instructions
- Preheat oven to 350°F.
- Add shortening, sugar, eggs, buttermilk, and lemon zest to FourSide jar. Secure lid and select "Batter."
- Add flour, baking soda, and salt to jar and secure lid. Press "Pulse" 4–6 times or until flour is incorporated.
- Pour batter into 2 greased 9"x 5" inch loaf pans. Bake for 30–35 minutes or until toothpick inserted in center of loaf comes out clean.
- Meanwhile, add powdered sugar and lemon juice to clean jar, secure lid, and select "Sauce."
- After removing loaves from oven, pour glaze over tops of loaves.
What kind of "Shortening"? Does this mean butter?
Recipe for lemon cake would kill me if I used all sugar ingredients recipe calls for
I made this today and it’s delicious. Made some substitutions based on what I had: butter instead of shortening, and 1/2 c sour cream and 1/4 c almond milk instead of buttermilk. I also used white wheat flour, and folded in 2 cups fresh blueberries after blending. Turned out fine so it’s a forgiving recipe! Took longer to bake, more like 50-55 minutes. I poked holes all over the breads with a cake tester when they came out of the oven and poured the glaze over while hot. Very good, will make again.
Do you leave the loaves in the pan while pouring the lemon sauce over them or do you remove them?
Any substitute to eliminate cholesterol? Blendtec could you consider more healthier items…disappointed & discouraged to recommend or utilize your recipes.
