Creamy Tomato-Basil Soup Recipe

This updated version of traditional tomato soup gets its creamy texture from cooked beans, rather than high-fat, high-calorie dairy products.

Ingredients
- 2 cups sprouted soy or white beans
- 2 cups tomato sauce
- 1 tbsp. chicken or vegetable bouillon
- 1 large onion quartered
- 1/8 tsp. dried basil
- 1 qt. warm water divided

Instructions
- Cook beans and onion in 1 quart boiling water for 15–20 minutes. Allow to cool.
- Add beans, onion, and 1 cup of cooking water to FourSide or WildSide+ jar and secure lid.
- Select "Soup" or "Hot" or "90" cycle or blend on a High speed for 90 seconds.
- Add remaining cooking water, bouillon, tomato sauce, and basil to jar and secure lid.
- Press "Pulse" 2–4 times to incorporate ingredients.

If you buy Organic beans they are by definition non GMO. :)

I started making a nearly identical recipe this summer for a sort of vegetarian pink sauce (a convenient way to get my 2 yr old and 3 yr old kids to eat beans). I make my own red sauce, and then instead of cream, I added pureed white beans from my blender. If you make this recipe minus most of the cooking water, you will have a lovely Pink Sauce for pasta or gnocchi. Also, I like to add a touch of grated parm at the end for the perfect finish. I know for a vegan/plant based version, you can use nutritional yeast for a cheesy flavor, but I have yet to try that.
For the record, I’m on Team Legumes (Go Beans!), if I’m going to have dairy I’ll choose a high/full fat version, but I often avoid dairy consumption; AND sometimes a short cut like bullion over homemade stock is the best option for me (although I use it sparingly).
At Sally: I do know for a fact you can buy NON GMO certified soy in the USA. I personally avoid soy all around because of a family member food allergy. But just a heads up, you can find and buy NON GMO soy.
