Cauliflower and cheddar team up in this healthy, hearty, creamy soup.

Ingredients

  • 1 1/2 tbsp. butter
  • 1 medium onion diced
  • 1 stalk celery diced
  • 2 cups low-fat milk (or your choice of milk)
  • 2 cups chicken broth
  • 1 cup water
  • 1 head cauliflower chopped into florets (about 6 cups)
  • 1/2 tsp. kosher or sea salt
  • 1/2 tsp. ground black pepper
  • 2 tsp. Dijon mustard
  • 4 oz. cheddar cheese

Instructions

  1. Sautée onions and celery in butter until tender.
  2. Add liquid ingredients, cauliflower, salt, pepper, and mustard and bring to a boil.
  3. Reduce heat and simmer until cauliflower is tender.
  4. Remove from heat and cool slightly.
  5. Using a slotted spoon, remove 4 cups of the vegetables and set aside.
  6. Working in batches, carefully transfer the remainder of the soup and cheese to jar and secure lid. Select "Sauces" or blend on a Medium to Medium Low speed for 30 seconds.
  7. Combine vegetables with creamed soup and garnish with parsley, shredded cheddar cheese or bacon.

  • This recipe sounds yummy but I would LOVE to see more recipes that you can make in the blender itself using the soup cycle such as the tortilla or broccoli cheddar soup that you have on your site. I just bought my blender and I am loving it. Please give us more recipes that allow us to use this awesome blender to its fullest ability. This blender rocks!!

  • Well I’m sure you could throw all the ingredients into the blender and it will make something. Just wouldnt taste like what the recipe intends. It is just a blender after all, not magic.

  • I agree! One of the perks of the blender is to be able to throw in a bunch of ingredients and cook soup. I can cook ANY other soup on the stovetop and then puree with a crappy blender, food processor, or immersion blender. I’d like to have recipes that actually utilize the soup cycle and don’t involve cooking on the stovetop.

  • Anything worth cooking, takes time…..I use my blender for smoothies and it is amazing, or making applesauce, whipped up my egg noodle dough for my homemade lasagna noodles, it worked beautifully…looking forward to trying more recipes and this cauliflower soup.

  • I agree. I used half and half on my first try and it worked out just great. The soup seems to have a lot of room for improvising and I think a touch of white wine or sherry would be good. We had some left over roast chicken so added that at the last minute [after blending] and had a full meal with a salad.

  • I have made this recipe a few years ago and it delicious. Although my recipe I added a carrot. What I did was I just threw everything into one big stock pot start to boil till it was tender and transferred it to my Blendtec. Adding cooked chicken at the very end is a great idea nnorman. You can also keep the base soup and add a different ingredient everyday and make everyday a different version. ;)

  • We subbed brocolli for Califlower since we had a ton in our freezer from the garden- it was delish! Soup is bland though- added garlic and paprika for a smidge more flavor. Not as thick as the picture made it look- but overall very good and super easy!

  • I have made many of their soups without cooking first and they come out fine using the soup button. I still like to either cook or microwave a little bit of reserved veggies and put in the the hot soup for just a little extra substance.

  • No blender required. Blender actually just makes this recipe a pain in the butt. Ditch the water, use whole milk. Don’t add cauliflower until last 15 minutes of a 45 minute simmer. Soup tastes fantastic.
