Raw Lemon Cheesecake

This raw lemon cheesecake is a tasty dairy-free, gluten-free dessert. Whether you or your guests have dietary restrictions or not, this is an awesome, unique dessert recipe to make and share.

1½ cups raw almonds
¼ cup shredded coconut
1 cup raw agave nectar
¾ cup fresh lemon juice
3 cups cashews, soaked overnight and rinsed
⅓ cup coconut oil
1 tsp vanilla extract


  1. Add almonds and coconut to jar and secure lid. Run cycle for 35 seconds on Speed 2 (or Low).
  2. Add ¼ cup agave nectar to jar and mix with spatula.
  3. Grease pie plate. Press nut mixture into pie plate and chill in refrigerator.
  4. Add remaining ingredients to jar in order listed and secure lid. Blend at Speed 5 (or Medium) for 40 seconds.
  5. Using spatula, pour and spread lemon filling into crust. Chill for 4 hours before serving.

    Yum! Any reason that I can’t use honey instead of agave?

    You can definitely use honey. We just did the raw agave option so that the recipe would be raw.
