Pineapple Zucchini Bread [Recipe Video]

pineapple zucchini bread

Pineapple Zucchini Bread

Get the full recipe on the Blendtec Recipes page. This hearty pineapple zucchini bread works as a breakfast, brunch item, snack or even dessert. It’s a sweet bread made of fruits, veggies and whole grains that you can feel good about eating. The pineapple makes the bread moist and delicious but the flavor isn't over-powering. There is only a slight hint of zucchini, so even people who stay away from veggies will love this bread! For more flavor, you could even add a glaze or cream cheese frosting to top it off.

Ingredients
½ cup walnuts
3 cups all-purpose or whole white wheat flour
2 tsp baking soda
½ tsp baking powder
1 tsp kosher salt
1 tbsp ground cinnamon
½ tsp ground nutmeg
3 lg eggs
1¼ cups sucanat
1 apple, cored and quartered
2 tsp vanilla extract
1½ cups pineapple chunks
1 medium zucchini, quartered
Directions
Preheat oven to 350˚F. Add walnuts, flour, baking soda and powder, salt, cinnamon and nutmeg to jar and secure lid. Press “Speed Up” to Speed 1 and allow full cycle to run. Dump dry ingredients into mixing bowl. Add eggs, sucanat, apple and vanilla to jar and secure lid. Select “Batters.” Add pineapple chunks and zucchini to jar and secure lid. Press “Pulse” 15-20 times until pineapple and zucchini are finely graded. Pour batter into mixing bowl. Using a spatula, incorporate all ingredients, then pour into two 8”x 4” greased loaf pans. Bake for 50–60 minutes or wooden toothpick inserted in center comes out clean.
