Lime and Piña Colada Ice Pops

If you’re looking for a little pick me up treat, Blendtec’s Lime and Piña Colada Ice Pops are just what you need. And because they can be prepared with or without alcohol, this recipe is a great dessert for girls’ night or family night.

This recipe combines the classic elements of light, refreshing piña coladas with cream of coconut, fresh pineapple, ice cubes, and yes, rum.  With these ice pops, you might just be transported to a beach in California or a tropical, all-inclusive resort in the Caribbean. All you need is a Blendtec, and you can have a mini vacation anytime you want.

To get this Lime and Piña Colada ice pop party started, you’ll add cream of coconut, ½ cup of pineapple chunks, rum, and ice cubes to your Blendtec jar, in that order. Pop on the lid and select the “ice crush” cycle, or blend on a medium to medium-low speed for 30 to 40 seconds. If you’re looking for something family-friendly and alcohol-free, simply replace the rum with four ounces of skim or coconut milk. That’s right—your kids will love this treat too!

Once your piña colada mixture is blended to perfection, pour it into your favorite ice pop molds, making sure each is about three-quarters of the way full. For a little more fresh fruit in each ice pop, add the remaining fresh pineapple chunks, shredded coconut, and lime zest, making sure the mixture doesn’t overflow. Carefully place the pops in your freezer until they’re solid—about five hours, depending on your freezer’s temperature.

While your piña colada pops are getting nice and frozen, you can take a nap, watch a movie with the family, or slather on some sunscreen by the pool. Once your ice pops are ready, you’ve got a delicious, refreshing snack that’ll help you beat the summer heat.

You can enjoy these ice pops after a family picnic, during an at-home date night, or even while lounging around the pool. Simply pop them out of the ice pop molds, and enjoy. Try not to get too much sun on your tropical vacation!
