Blendtec Recipe - Italian Mini Loaves

Ingredients

  • 2 tsp. chicken or vegetable bouillon
  • 1 1/2 cup cooked brown rice
  • 1 tbsp. dried white beans
  • 2 large eggs
  • 1/8 tsp. garlic powder
  • 1/2 cup grated mozzarella cheese
  • 2 tbsp. green onions
  • 2 tsp. Italian seasoning
  • 4 tbsp. olives chopped
  • 1 1/2 cup tomato sauce

Instructions

  1. Preheat oven to 375°F.
  2. Add white beans to Kitchen Mill, and grind into flour.
  3. Add resulting bean flour, 1 cup tomato sauce, 2 tablespoons olives, eggs, green onions, Italian seasoning, bouillon, garlic powder, and rice to large mixing bowl.
  4. Shape into 6 mini loaves on baking sheet coated with cooking spray, or press into 9-x-13-inch baking pan coated with cooking spray. Bake for 15–20 minutes.
  5. Meanwhile, mix ½ cup tomato sauce, 2 tablespoons olives, and cheese. Spoon over loaves; return to oven to let cheese melt.
