Healthy Oatmeal Muffins Recipe

Filled with heart-healthy oats, these muffins are tasty and nutritious.

Ingredients
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup buttermilk
- 1/4 cup canola oil
- 1 large egg
- 1/2 tsp. kosher or sea salt
- 1/2 cup packed brown sugar, applesauce, or frozen orange juice concentrate
- 1 cup rolled oats
- 1 cup whole wheat flour

Instructions
- Preheat oven to 400°F.
- Add rolled oats and buttermilk to the WildSide+ jar and let stand for 5 minutes. Add egg; brown sugar, applesauce, or orange juice concentrate; and oil. Secure lid and select “Batter.”
- Add remaining ingredients to jar and secure lid. Press “Pulse” 4–6 times or until dry ingredients are barely incorporated; do not overblend.
- Spoon into 12 greased muffin tins. Bake for 14–15 minutes or until lightly browned.
Makes 1 dozen muffins.
Blend on Medium Low (speed 3 or 4) for 30 seconds. :)
You can make buttermilk from regular milk by adding vinegar or lemon juice.
I almost never have buttermilk on hand. Would while milk be an acceptable substitution?
My blender does not have a "Batter" setting What would you recommend that I use instead?
