Ingredients

  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 1 large egg
  • 1/2 tsp. kosher or sea salt
  • 1/2 cup packed brown sugar, applesauce, or frozen orange juice concentrate
  • 1 cup rolled oats
  • 1 cup whole wheat flour

Instructions

  1. Preheat oven to 400°F.
  2. Add rolled oats and buttermilk to the WildSide+ jar and let stand for 5 minutes. Add egg; brown sugar, applesauce, or orange juice concentrate; and oil. Secure lid and select “Batter.”
  3. Add remaining ingredients to jar and secure lid. Press “Pulse” 4–6 times or until dry ingredients are barely incorporated; do not overblend.
  4. Spoon into 12 greased muffin tins. Bake for 14–15 minutes or until lightly browned.

Makes 1 dozen muffins.

    Blend on Medium Low (speed 3 or 4) for 30 seconds. :)

    You can make buttermilk from regular milk by adding vinegar or lemon juice.

    I almost never have buttermilk on hand. Would while milk be an acceptable substitution?
