Corn Bread II Recipe

Blendtec corn bread recipe
This savory corn bread is delicious but easy to make.

Ingredients

  • 1/3 cup all-purpose flour
  • 2 tsp. baking powder
  • 2 egg whites
  • 1/3 cup granulated sugar
  • 1/2 tsp. kosher salt
  • 1/3 cup light olive oil
  • 1 cup milk
  • 1 cup popcorn kernels

Instructions

  1. Preheat oven to 350°F.
  2. Add popcorn kernels to Kitchen Mill, and grind into flour.
  3. Add all ingredients to WildSide+ or FourSide jar in order listed. Secure lid and press "Speed Up" to Speed 6. Allow blender to run for 30 seconds or until batter is mixed.
  4. Pour batter into greased 8-x-4-inch loaf pan.
  5. Bake for 40 minutes or until golden brown.

    How about the Wild Side jar?

    Corn Flour can be made easily in the FourSide jar. Add 2 cups of popcorn to FourSide jar and secure lid. Select Speed 7 and allow to run 1 full cycle. To get a finer flour, run the cycle one more time on Speed 7.

    You can make it the same way in the WildSide+ jar, you’ll just want to add 3 cups instead of 2. Happy blending!
