Ingredients

  • 1 1/2 tbsp. butter
  • 1 medium onion diced
  • 1 stalk celery diced
  • 2 cups low-fat milk (or your choice of milk)
  • 2 cups chicken broth
  • 1 cup water
  • 1 head cauliflower chopped into florets (about 6 cups)
  • 1/2 tsp. kosher or sea salt
  • 1/2 tsp. ground black pepper
  • 2 tsp. Dijon mustard
  • 4 oz. cheddar cheese

Instructions

  1. Sautée onions and celery in butter until tender.
  2. Add liquid ingredients, cauliflower, salt, pepper, and mustard and bring to a boil.
  3. Reduce heat and simmer until cauliflower is tender.
  4. Remove from heat and cool slightly.
  5. Using a slotted spoon, remove 4 cups of the vegetables and set aside.
  6. Working in batches, carefully transfer the remainder of the soup and cheese to jar and secure lid. Select "Sauces" or blend on a Medium to Medium Low speed for 30 seconds.
  7. Combine vegetables with creamed soup and garnish with parsley, shredded cheddar cheese or bacon.

    We subbed brocolli for Califlower since we had a ton in our freezer from the garden- it was delish! Soup is bland though- added garlic and paprika for a smidge more flavor. Not as thick as the picture made it look- but overall very good and super easy!

    This recipe was really good! I added/substituted almond milk, frozen cauliflower florets, 2oz of jalapeño cheddar cheese and minced garlic. We will definitely be having this again!

    Soup was excellent… only deviations was whole milk and a teaspoon of adobo.

    I have made many of their soups without cooking first and they come out fine using the soup button. I still like to either cook or microwave a little bit of reserved veggies and put in the the hot soup for just a little extra substance.
