Ingredients

  • 3 oz. cheddar cheese roughly chopped
  • 1/8 tsp. ground black pepper
  • 1/8 tsp. ground nutmeg
  • 1/4 tsp. kosher or sea salt
  • 1 cup vegetable broth
  • 1 cup water
  • 4 cups broccoli florets steamed and divided

Instructions

  1. Add 3½ cups broccoli florets and remaining ingredients to WildSide+ or FourSide jar. Secure lid and select "Soup" or blend on a High speed for 90-180, blending longer for hotter soup.
  2. Add remaining ½ cup broccoli florets to jar. Secure lid and press "Pulse" 3–5 times or until broccoli florets are desired size.

Notes

Add a pinch of crushed red pepper for a little kick.

    Here’s the version of this soup I made today – with just a few changes: sauteed garlic and 1 small onion while steaming my broccoli. Used tarragon, thyme and celery seed in place of nutmeg. Substituted 1 cup of water with 1/2 cup water and 1/2 cup milk. It’s tasty, and took all of 12-15 minutes to make. Delicious!

    I just made this for my lunch. I don’t have a Blentec. I stemmed the broccoli and processed everything in my Ninja blender, then just heated the soup on the stove. Creamy and delicious!

    Wow this was delicious!!! After reading the reviews I decided to add a little more cheese. So I added 1 1/2 cups instead of 1/2 cup (3oz) of Kraft sharp shredded cheese. I used 3 heads of broccoli and used chicken broth instead of vegetable. The hot setting went for 180 seconds and the soup came out soooo rich and creamy. My husband had thirds! Definitely going to make this again!!
