7 smartfruit summer recipes

We recently spent some time in the kitchen developing some yummy recipes utilizing Smartfruit's products, see what we made and let us know which one you want to try most!

 

Summer Recipes

Strawberry Poppy Seed Dressing

Yields 6 oz

2 tbsp Smartfruit Summer Strawberry
2 tbsp  almond milk
3 tbsp mayo (yogurt or sour cream can be substituted)
2 tsp white vinegar
1 ½ tsp poppy seeds

Place all ingredients in Blendtec Twister jar in order listed. Secure Twister lid and pulse 5-6 times until all ingredients are incorporated. Turn lid counter-clockwise while blending.

Summer Recipes

Strawberry Balsamic Dressing or Marinade

Yields 6 oz

½ cup Smartfruit Summer Strawberry
2 tbsp balsamic vinegar
2 tsp Dijon mustard
1 clove garlic
¼ tsp salt
¼ tsp pepper

Place all ingredients in Blendtec Twister jar in order listed. Secure Gripper lid and pulse 5-6 times until all ingredients are incorporated.

 

Summer Recipes

Blooming Berry Vinaigrette

Yields 8 oz

¾ cup olive oil
2 tbsp white vinegar
3 tbsp Smartfruit Blooming Berry
1 clove garlic
¾ tsp salt
¾ tsp pepper

Place all ingredients in Blendtec Twister jar in order listed. Secure Gripper lid and pulse 5-6 times until all ingredients are incorporated.

Summer Recipes

Tropical Sorbet

Yields 16 oz

¼ cup Smartfruit Tropical Harmony
¼ cup almond milk
1 ½ cups frozen mango chunks

Place all ingredients in Blendtec Twister jar in order listed. Secure Twister lid and select Frozen Treats. Turn lid counter-clockwise while blending.

Variation: Use 1 ½ cups of frozen strawberries instead of mango chunks.

Summer Recipes 

Banana Lime Smoothie

Yields 28 oz

¾ cup Smartfruit Sunny Banana
¾ cup coconut milk
1 lime, peeled
2 ¼ cups ice

Place all ingredients in Blendtec Wildside+ or Fourside jar in order listed. Secure lid and select the “Smoothie" preset cycle.

 

Summer Recipes

Blooming Berry Baked Oatmeal

2 cups old-fashioned oats
2 teaspoons cinnamon
1 tsp baking powder
¾ tsp fine grain sea salt (or ½ tsp regular table salt)
¼ tsp nutmeg
1 ¾ cups almond milk
½ cup Smartfruit Blooming Berry
2 large eggs or flax eggs*
2 tbsp  melted butter or coconut oil
2 tsp vanilla extract
2 ½ cups fresh or frozen mixed berries

*1 tbsp ground flaxseed + 3 tbsp water (combine and allow to sit for 15 minutes prior to adding to recipe)

  1. Preheat oven to 375°F. Grease a 9-inch square baking dish and set aside.
  2. In medium mixing bowl, add the oats, cinnamon, baking powder, salt and nutmeg stir gently to combine. Set aside.
  3. Place milk, SmartFruit Blooming Berry mix, eggs, melted butter or coconut oil, and vanilla in Blendtec Wildside+ or Fourside jar. Blend on low for 10 seconds.
  4. Spread 1 ½ cups of frozen or fresh berries evenly on the bottom of greased 9-inch square baking dish (no need to defrost frozen fruit). Cover berries with dry oat mixture and gently pour wet ingredients over the oats. Gently pat down any remaining dry oats into milk mixture. Scatter remaining berries across the top.
  5. Bake for 42-45 minutes, until top is golden brown. Remove baked oatmeal from oven and allow to cool.
  6. Drizzle SmartFruit Blooming Berry on top, or top with yogurt or cream. Enjoy!
 
Summer Recipes

Peachy Fruit Crepes

Yields 10 crepes

Crepe
1 cup milk of choice
1 tsp salt
2 eggs
3 tablespoons Smartfruit Perfect Peach
1 tablespoons melted butter
½ tsp vanilla extract
¾ cup all-purpose flour

Filling
1 small apple
1 kiwi, peeled
6 medium strawberries
1 medium peach, peeled and pitted
½ cup Greek yogurt
2 tbsp Smartfruit Perfect Peach

  1. Place ingredients for crepes in Blendtec Wildside+ or FourSide jar in order listed. Secure lid and blend on medium speed for 20 seconds. Allow batter to rest in fridge for one hour before cooking.
  2. In Blendtec Twister jar add Greek yogurt and SmartFruit Perfect Peach. Secure tine lid and blend on low speed for 15-20 seconds until combined. Set aside.
  3. Dice all fruit into small pieces and place in medium mixing bowl. Pour yogurt mixture over fruit and stir to combine. Set aside in fridge while cooking crepes.
  4. Heat a skillet or crepe pan over medium heat and lightly coat with oil or cooking spray. For each crepe, pour ¼ cup batter into center of pan and swirl pan gently to distribute batter in a thin layer. Cook for 1 minute or until the top begins to dry out and underneath is lightly golden. Flip and cook an additional 30 seconds until done. Repeat with remaining batter.
  5. Stack completed crepes on a plate with wax paper between each crepe to prevent sticking.
  6. To serve, fold crepe in half, fill with desired amount of fruit salsa and fold over again. Top with additional Greek yogurt and drizzle with SmartFruit Perfect Peach. Enjoy!

  • The WildSide+ jar will work fine. You may have to double the recipes that call for the Twister jar though, just because it’s quite a bit smaller than the WildSide+ jar.

  • The SMARTFRUIT recipes sounded good, but I was surprised that they didn’t come out with an organic product as some fruits such as berries, strawberries and peaches – to name a couple – have very high concentrations of pesticides. I don’t buy anything that’s not organic, but if they come out with an organic product in the future, I be the first one in line to buy.
