Kale Guacamole

Kale adds a boost of nutrition to the classic guacamole for a delicious and nutritious anytime snack
Eating fruits and vegetables is an important part of staying healthy, but so many of us are seriously lacking in the amount we actually eat. I love vegetables, but even I have a hard time eating as many as I should. With my kids, well, it’s like pulling teeth a lot of the time. It may not be a popular idea, but I have been known to sneak in veggies whenever possible.
I love getting my kids to eat kale and spinach in juice or smoothies, and now this guacamole is another of my favorites. The kale adds so much color, but other than that no one will ever know that this guakalemole pack a serious nutritional punch.
Kale Guacamole
(aka Guakalemole)
Ingredients
Juice from 1 lime ¼ of a red onion ½ jalapeño, seeded 3 kale leaves, stems removed 1 avocado, pitted and quartered Salt to taste
Instructions
- Place the lime juice, red onion, jalapeño, and kale in the Twister jar. Pulse to chop (3 – 4 pulses).
- Add the avocado and pulse a few times to reach your desired consistency, turning the twister lid counterclockwise while pulsing.
- Season with salt to taste.
