Easter is this Sunday. I know not everybody celebrates this holiday, but I love Easter. For me, it means spring is finally here, and I love spring weather in Utah. I love going Easter egg hunting (yes, I still do that, even though many would think I'm too old). My mom likes to do an Easter egg hunt for her grandkids and one for her kids; she's awesome like that. This year is also my son's first Easter, and my first with a child, and I can't wait to celebrate it with my husband and son. I'm even thinking of getting him a cute Easter outfit for Sunday; any excuse to shop is a good one! I also love getting together with family and enjoying a nice Easter dinner. So here are five great recipes that you can enjoy with your family and friends for the holiday.
Easter Recipes
2 tbsp water
2 tbsp fresh lemon juice
1 tbsp nama shoyu (raw soy sauce)
¼ c red bell pepper
2 tbsp red onion
2 tbsp nutritional yeast
1 clove garlic
1 c cashews, soaked for 2-4 hours and rinsed
Add ingredients to FourSide jar in order listed and secure lid. Select "Ice Cream" and serve.
Creamy Lime Salad Dressing
2 c fat free plain Greek yogurt
1 tbsp olive oil
1 lime, zest and juice
2 tsp red wine vinegar
½ c cilantro, lightly packed
1 clove garlic
1 tbsp granulated sugar
¼ tsp salt
¼ tsp black pepper
Add ingredients to jar in order listed and secure lid. Select "Dressing." Serve over any combination of mixed greens.
Dinner Rolls
1 c warm water
1 tbsp active dry yeast
1 tbsp honey
1 tsp kosher salt
1 tbsp fresh lemon juice
1½ tbsp vegetable oil
2½ tbsp vital wheat gluten
2⅔ c whole white wheat flour, divided
Add water, yeast, and honey to WildSide+ jar and secure lid. Pulse 2 times. Allow the yeast to proof 5-10 minutes. Add salt, lemon juice, oil, and wheat gluten to jar and secure lid. Pulse 2 times. Add ⅓ of flour to jar and secure lid. Pulse once. Add another ⅓ of flour and secure lid. Pulse 3-5 times. Add last ⅓ of flour and secure lid. Pulse 8-10 times until all flour is incorporated and dough ball forms. Preheat oven to 350°F. Allow dough to rest in jar for 10-15 minutes. Dump dough ball onto oiled surface and shape into dinner rolls. Place rolls into greased muffin pan. Allow dough to rise for 20 minutes in a warm place or until dough has topped the pan by approximately one inch. Bake for approximately 12-20 minutes until done. Allow to cool before eating.
Chocolate Mousse
2 oz semisweet chocolate
1 tbsp coconut oil
2 tbsp agave nectar
⅛ tsp kosher or sea salt
1 tbsp unsweetened cocoa or cacao powder
¾ c heavy whipping cream
Add semisweet chocolate, coconut oil, agave nectar, salt, and cocoa powder to microwave-safe bowl and microwave for 20–30 seconds. Allow to cool to room temperature. Add whipping cream to Twister jar, and place lid on jar. Select Speed 1, and run for 10 seconds or until soft peaks form. Add chocolate mixture, and place lid on jar. Select Speed 1, and run for 5–10 seconds or until chocolate is incorporated. Pour into 4 ramekins, and chill for at least 1 hour. You can also try our Vegan Chocolate Mousse
Mango Pineapple Sorbet
1 orange, peeled and halved
1 c pineapple
2 tbsp agave nectar
1½ tsp fresh lime juice
2 c frozen mango chunks
Add ingredients to WildSide+ jar in order listed and secure lid. Select "Ice Cream" and serve.

Agave nectar is a vegan version of honey. You can use honey or another sweetener in it’s place if you would like.

I recently bought the BlendTec. Do you have any recipes for ice cream that does not use dairy, but instead uses coconut milk? All my ice cream turns out like a thick smoothie.

You can use it as a dip or as a spread on sandwiches.

1/4 c coconut milk
1 1/2 tbsp sugar
1/2 tsp lemon juice
1 1/2 c frozen strawberries, or blueberries, or raspeberries
This recipe is typically made in the Twister jar. You might have to add a 1/4 c/tsp/tbsp to everything to do it in the FourSide or WildSide+ jar.

I am a new Blendtec owner (arrived yesterday!). I notice that a lot of recipes call for Agave nectar. Is this used as a more healthy replacement for sugar or honey?
