Black Bean Fudge [Recipe of the Week]

Black Bean Fudge

This healthier version of fudge will give you a delicious chocolate treat without being full of fattening ingredients and lots of calories. As always, we encourage you to take this recipe and make it your own! Is there something you'd substitute? Would you add nuts? If so, what kind?

Black Bean Fudge

Ingredients
1 ½ cups cooked black beans, drained and rinsed
3 Medjool dates, pitted
2 tsp vanilla extract
⅓ cup coconut oil
½ cup unsweetened cocoa
2 ½ tbsp brown sugar
⅓ cup powdered sugar
Instructions
  1. Add beans, dates, and vanilla to Twister jar and blend on speed 3 for 15 seconds, then speed 7 until beans and dates are blended into a paste. This may take up to 2 minutes.
  2. Add oil, cocoa, and sugars to jar and blend again on speed 7 for until all ingredients are incorporated.  Turn lid counterclockwise during blending.
  3. Press into 8-8-inch baking pan and chill in refrigerator for at least 2 hours. Cut into 1x1-inch cubes before serving.
