A perfect tropical combination of sweet and tart, this sherbet is the delicious treat on a hot day.

Ingredients

  • 0.66 cup full-fat coconut milk
  • 1/2 small banana
  • 1 tbsp. fresh lime juice
  • 4 tsp. agave nectar
  • 11/2 oz. frozen pineapple chunks approximately 2½ cups
  • 0.66 cup ice cubes approximately 5-6 ice cubes

Instructions

  1. Add ingredients to FourSide Jar in order listed and secure lid. Select “Ice Cream” and serve.

Note: If your Blendtec doesn’t feature an Ice Cream/Frozen Yogurt button, blend on a Low speed for 15 seconds, then blend on a Medium High speed for 30 seconds. If more blending is required, press pulse several times until desired texture is achieved.

  • Using fresh or canned pineapple in this recipe will not result in a frozen treat, but a smooth, cool milk-shake. The frozen pineapple helps to freeze the remaining ingredients to give the sherbet texture.

  • We used frozen pineapple, but included the core – frozen. It seemed that the blender got stuck until it went into high-speed mode, and we had to blend it a second time. Should we not freeze the pineapple cores? It was DELICIOUS in the end, but I don’t want to damage the machine.

  • I made this and the taste was good. However, when I put this in the freezer, it was a block of ice. Wanted to serve this the next day, so I thawed it out almost, scooped it in a glass and refrigerated it for a couple of hours and then put it in the freezer for the last 1/2 hour. Is there a secret to making sherbets? Do they always have to be done at the last minute?

  • My husband’s addicted to this. Yup, we had it the other night so he made it the next day for breakfast, or would have if we’d had any bananas left. He made a special grocery run for the banana. We decided that making a double batch needed too much help with the mixing so next time it will be two batches made one right after the other. Definitely writing this recipe down to tape to the inside of the cupboard!!

  • In my experience sherbet (or sorbet or ice cream) is best when eaten immediately. If you freeze it and it comes out frozen solid, your best bet is to thaw it slightly and run it through the blender again
