Peanut Butter Bread Recipe

This bread is great as a quick breakfast for the kids before they're off to school. To up the flavor factor even more, serve with strawberry freezer jam.

Ingredients

  • 1 tbsp. baking powder
  • 2 large eggs
  • 1 cup fat-free milk
  • 0.66 cup granulated sugar
  • 1 tsp. kosher salt
  • 1 cup peanut butter
  • 1 3/4 cup all-purpose flour

Instructions

  1. Preheat oven to 350°F.
  2. Add milk, eggs, sugar, and peanut butter to jar. Secure lid and select "Batter" (or blend on Medium Low, speed 3 or 4, for 30 seconds).
  3. Add salt, baking powder, and flour to jar. Secure lid and press "Pulse" 4–6 times or until flour is incorporated.
  4. Pour batter into greased 9"x5" loaf pan. Bake for 50 minutes or until wooden toothpick inserted comes out clean.

Notes

For 4 small loaves, divide batter among 4 mini loaf pans and bake for 30 minutes. Substitute 1¾ c white whole wheat flour in place of all-purpose flour.

    I only had salted peanut butter, so left out the added salt. Between the peanut butter and the baking powder, there is still plenty of salt to be flavorful, and it lets the jam flavor shine through. Love this bread!
