Ingredients
- 2 large eggs
- 1/4 cup canola oil
- 3 Granny Smith apples quartered and cored
- 1 tsp. vanilla extract
- 1/2 tsp. kosher or sea salt
- 1/4 tsp. ground cloves
- 1 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 3/4 cup granulated sugar

Instructions
- Preheat oven to 350°F.
- Grease 9"x5" loaf pan; set aside.
- Add eggs, oil, 1½ apples, vanilla extract, and sugar to WildSide+ jar. Secure lid and select "Whole Juice"or blend on a Medium to Medium-High speed for 50-60 seconds.
- Add remaining 1½ apples and secure lid. Press "Pulse" 5–6 times.
- Add salt, cloves, cinnamon, baking soda, baking powder, whole wheat flour, and all-purpose flour. Secure lid and "Pulse" 5–6 times or until flour is incorporated; do not overblend.
- Pour batter into greased pan, and bake for 45–50 minutes or until toothpick entered into center comes out clean.

I made this recipe haven’t tasted it yet as it is still in the oven but the small jar was filled to the brim with the flour . Can it be made with the larger original jar.

I have a lot of success using flax meal to replace eggs. I grind flax into a meal in my Blend Tec. Then I use 1 T. flax meal to 2 T. hot water. This is the equivalent of 1 egg. I heat the flax/water in microwave until it thicken and is slimy like an egg. Then I add extra baking powder for leavening.

Do you have to use the WildSide jar? I don’t have that one.
I am vegan so I will use my egg replacer or flaxseed, applesauce for the oil and spelt flour should be great.

Hi Angela, using vegetable oil will work just the same as canola oil. Enjoy!
Liz, you can use the FourSide jar, but it is smaller than the WildSide jar, meaning the mixture will fill the jar to the top and not all the flour may be incorporated. You may need to manually blend in the remaining flour.

Should the a apples be peeled or can the skins stay on?
Really tasty! The bottom of my loaf stayed in the pan, though. I usually unmold quick breads as soon as the pan has cooled enough to be handled, but next time I will let this recipe cool completely.

I just made this recipe. I only had 2 red apples and I used extra virgin olive oil instead of canola oil and used all whole wheat. It is so delicious and very moist and my kids loved it.
I substituted spelt flour for the all-purpose flour and stevia in the raw for sugar. It was very dense, fell when I took it out of the oven. Could my substitutions be the cause of the density?
Hi Deanne. Different grains and flours can change the density of the bread or products they are being baked into. Sugar helps with maintaining the structure and when it is replaced, it can cause the product to sink.

If using larger apples (like the kind sold separately), use only 2. I used 2 1/2 large applies and I think that was too much. Added toasted pecans – very good.
Awesome recipe. I modified slightly by using fresh ground spelt, coconut oil and coconut sugar. Loved the taste of cloves and the moistness of the apples. Blendtec made it soooo easy to prepare!

Hi Ann. You can make this recipe with coconut flour, though altering the flour may change the final texture of the bread. It will also increase the fat content in the nutrition facts. Yes, you can substitute the pumpkin puree for apples.

I made this bread twice. The first time exactly as described, and it turned out pretty good, but I thought it could use a little tweaking to make it even better. I made it again today, with the following modifications: instead of whole wheat and AP flour, I used one cup of whole spelt flour and half a cup of whole rye flour. For spices I used a mixture of cinnamon, cloves, allspice and anise, all freshly ground, one generous tablespoon in total. I also wanted to add some nutmeg, but forgot. Finally, I added a handful of walnut halves and pieces together with the dry ingredients before the final mix.
The bread rose beautifully, it’s light and fluffy and not dense at all, in spite of using 100% whole grain flours. Also, I like the taste with the whole spelt and rye flours, the larger amount and variety of spices and the walnuts much better. It’s really great now, almost perfect.
Modifications I’ll make next time: add even more spices, maybe two tablespoons, and don’t forget the nutmeg this time. Also, add the walnuts later, maybe before doing the final two or three pulses, to retain some larger pieces. The six final pulses chopped the walnuts up much finer than I expected, I think I’d like the texture better with larger pieces.
Bottom line: great recipe that’s an excellent starting point for individual tweaks and modifications, and ridiculously fast and easy to prepare.
The instructions say to add sugar but there is no sugar listed in the ingredients.
I would love to see recipes that start with wheat berries (like the awesome pancake recipe). We make all our breads with freshly ground wheat berries. It’s so easy to grind wheat in the Blendtec!

Definitely love this recipe, cut the sugar down to 2/3 cup, may cut it to 1/2 next time and instead of the 1/2 cup whole wheat flour I used 1/2 cup oat flour (rolled oats turned into flour in the Blendtec)

We think it tastes best with Granny Smith but you can definitely use any apples!
Yes, almond flour may be substituted for whole wheat flour. A good rule of thumb for substituting almond flour is to start with half of the amount called for the original flour and assess the texture. If more flour is needed, add 1 tbsp at a time.
How in the world can you recommend canola oil? ALL canola oil in Canada is GMO and about 90% in the U.S. And weren’t Granny Smith GMO apples just approved for release into the U.S. market? I use apples from my own orchard, old varieties like Snows and Starks, sweet and tart at the same time. And btw, only cane sugar is GMO free. For goodness sake, the recipes are great but how about making sure they’re also GMO free?
Just received our Blendtec yesterday and have been busy trying all sorts of recipes. This one is awesome! Made a few changes… used 3 medium gala apples and for the flour I used 1 cup organic all purpose flour and 1/2 cup coconut flour. Very tasty!
Guess what. I don’t give a rxts axs about GMO free. GMO doesn’t necessarily mean bad, nor does Non-GMO necessarily mean good. Common sense, people, use common sense instead of ideology.
