This dish may appear to be mashed potatoes, but it is quite different. Skordalia is essentially mashed potatoes with a Greek twist. Unlike traditional mashed potatoes, skordalia incorporates copious amounts of garlic. In fact, the word "skordalia" comes from the Greek word "skorda," which means garlic. The skordalia recipe below also includes almonds, which add a subtle nutty flavor that sets it apart from the usual mashed potato fare.

Skordalia is a Greek garlic puree traditionally made with potato or bread crumbs. It will become a staple in your kitchen when you see how easy it is to make and how versatile it is to use. My version replaces some of the potato with almonds, providing a texture I love along with a boost of protein. The intense garlic flavor is the most prominent, tempered by fluffy potato, creamy olive oil, and almonds.Fresh lemon juice or red wine vinegar add tartness.
Skordalia is often made by hand with a mortar and pestle or ricer. Luckily for us, a Blendtec blender is powerful and efficient enough to mix the ingredients quickly, producing a thick, creamy puree in a matter of seconds, before the sauce has time to even think about getting pasty. Your Blendtec blender is the ideal tool to make skordalia, saving you time, energy and mess.
So what do you do with skordalia? In short, just about anything! It can be used like hummus as a dip for raw vegetables (bell peppers and radishes are my favorite) or crackers, or as a spread in wraps and sandwiches. It's wonderful with turkey and rotisserie chicken. Traditionally served with salt cod cakes and other fish, roasted meat like lamb or beef, and boiled or roasted vegetables like beets, zucchini and eggplant, skordalia provides a burst of flavor to almost any meal. In some regions of Greece, skordalia is served as an entree; in others, it's presented as an accompaniment to a salad.
Try it at your next dinner party or gathering as an appetizer with crudite, alongside roast beef or with a warm beet salad. You're sure to get inquisitive looks, enthusiastic comments and many rave reviews.
Ingredients
1 lb russet baking potatoes
1 cup extra-virgin olive oil
½ cup water
2 tbsp red wine vinegar or freshly-squeezed lemon juice
3/4 cup raw almonds
4 large or 6 small cloves of garlic, roughly chopped pinch of kosher salt
Instructions
Place the potatoes whole into a pot; cover with cool water and bring to a boil. Lower the heat slightly and cook for 20-30 minutes, until a fork easily pierces the potato. Drain and cool until you can handle. Use a spoon or paring knife to remove the skin, then mash the potato coarsely with a fork. The mashed potato should be warm when you proceed.
In your Blendtec Twister jar, add the olive oil, water, red wine vinegar or lemon juice, almonds, and garlic, in that order. Cover with the Mini Gripper lid and blend on Speed 4 for about 15 seconds or until you have a smooth sauce. (You will see some flecks of almond and feel some texture from them, and that is okay.)
The mixture should look very thick and creamy. Add the mashed potato to the Twister jar and use the Spectacula spatula to push it down into the garlic puree. Put the Mini Gripper lid back on and pulse for 4-6 seconds (about 4 pulses) to incorporate the potato. Serve immediately

I went strawberry picking a couple weeks ago. I got carried away picking like I always do. Who needs 16 quarts of strawberries? I do, because I have a freezer and it was begging me to fill it with freshly picked, sweet, and juicy strawberries. It's a ridiculous amount to have on hand if you're not canning them, but I'm a food blogger! I'll use them up in a jiffy! Right?
I've always loved making and eating sorbet. I think I'll begin whittling down my stock pile of berries with a sweet and tart sorbet. I'm the kind of person that adores fruit in dessert anyway, so of course I would love sorbet. I think my favorite part is that fruit always offers up the most gorgeous color, especially the berries. Okay so, I can't just have one favorite part. I also love how refreshing sorbet is. Plus, sorbet is a great replacement for ice cream.
This recipe became a lot easier when Blendtec sent me their blender. There's absolutely no need to break out the ice cream maker; I'm not sure how many people have them anyway. You can easily toss your frozen berries, cold water, sugar, and lime juice into the jar and set it to ice cream. The mixture will be pretty thick, but melt-y after it's blended. I always pour mine into a loaf pan, cover with plastic wrap, and let it harden up in the freezer for 4 hours, or overnight. It's worth the wait, but if that sounds like too long of a period, you can definitely scoop some in a dish and go to town on it. I won't judge!

I recently tried a store-bought watermelon lemonade that was absolutely delicious! But it was chock full of sugar, and probably not a lot of actual watermelon juice. So I decided to try my hand at a homemade version made in my blender and sweetened with honey. I added fresh basil for an extra punch of flavor. I love the way it turned out! It was so quick and easy to juice the watermelon and lemons in my Blendtec. This lemonade is definitely the perfect, refreshing drink for a hot summer day!

]]>After the Civil War ended in 1865, the country felt deep sorrow over the loss of hundreds of thousands of American soldiers and civilians. Grieving family and friends would gather in the late spring to commemorate and honor their family members’ sacrifice, often decorating their graves with flowers and offering prayers.
This remembrance process became known as Decoration Day and was officially named in 1869, with the observed day schedule for May 30 every year.
As our nation experienced new global conflicts, Decoration Day morphed into Memorial Day, honoring those service members lost in all wars. Congress passed the Uniform Holiday Act in 1968, which officially marked Memorial Day as the last Monday in May. Assigning Memorial Day to a Monday allowed people to have a three-day weekend to remember and honor their lost loved ones.
Since Memorial Day falls on the last weekend of May and most schools are finished for the year, the three-day weekend has become the unofficial kickoff to summer. Between swimming, BBQs, and family fun, it’s important to take time to honor those who made the ultimate sacrifice for our country.
Whether you have family members who served or just want to remember those who fought to protect our nation, here are some small, simple ways to honor the meaning of Memorial Day while still enjoying your summer fun.
See if any cities in your area host a Memorial Day parade. They’re lively celebrations that include marching bands, dance teams, and floats with active and retired military members prominently featured throughout the parade.
When service members pass by your area, stand and cheer for them to show your appreciation for their service.
On Memorial Day, there is a National Moment of Remembrance for our fallen heroes. At 3pm local time, observe one minute of silence and think of those currently serving or lost in armed forces.
Most areas have a veteran’s cemetery for those who have served. Take some time to put flowers on graves or place small American flags in the grass in these cemeteries to observe the day. Additionally, veteran cemeteries often hold small memorial services that you can attend to allow you to pay your respects to our nation’s heroes.

The reality is that while we know what celery does for us, very little research has been done on the specific health benefits of celery juice. Most accounts of the origins of celery juice trace back to a self-proclaimed medical medium named Anthony William. He is an author of many top selling books and a popular TV guest.
Williams doesn’t have any medical training, but he’s built a career out of spreading awareness of the health benefits of drinking celery juice.
