Almond Spread

This smooth and creamy almond spread is absolutely delicious–and so simple to make. Packed with fiber, vitamins, and healing antioxidants thanks to nutrient-rich veggies and almonds, this almond spread is much healthier than many of the high-fat dips and spreads you often find at holiday gatherings. Serve it as a vegan substitute for pate by molding it into a ball or loaf shape, or simply scoop it into a serving dish and use it as a spread for crackers, celery stalks, or lettuce cups!

Ingredients

½ cup raw almond butter
¼ cup organic carrot juice
1 cup celery, finely chopped
½ cup green onions, finely chopped
3 teaspoons of lemon juice
¼ cup purified water
¼ cup parsley, finely chopped dulse flakes

Directions

1. Add almond butter, celery, green onion, lemon juice and half of the carrot juice to your Blendtec blender and pulse until well combined.

2. Add more carrot juice if necessary for blender to pulse ingredients. You can add more almond butter, one tablespoon at a time if mixture becomes to thin, or add more water, one tablespoon at a time, to thin if mixture if it becomes thicker than desired.

3. Move mixture to a medium bowl and add parsley and dulse flakes to taste. Enjoy!
