Add soybeans or white beans to Kitchen Mill, and grind into flour; set aside.
Add honey, molasses, water, vanilla ice cream, vanilla extract, salt, and cinnamon to saucepan; cook over medium heat. Meanwhile, add soy or white bean flour, sunflower seeds, sesame seeds, oats, almonds (if desired), and coconut to large bowl. Pour honey mixture over dry ingredients and mix well.
Spread thinly on baking sheets, and bake at 325°F for 20–30 minutes, stirring every 5 minutes to break up chunks. Reduce heat to 250°F, and bake additional 30 minutes, stirring occasionally. Allow to cool, and add raisins or other dried fruits, if desired. Store in airtight container.
