Fresh Cornbread

1 cup milk
1/3 cup light olive oil
2 egg whites
½ tsp salt
2 tsp baking powder
1/3 cup sugar
1¼ cup corn flour (2 cups popcorn kernels to mill)
½ cup flour

Preheat oven to 350º F. Mill popcorn kernels in Kitchen Mill to make corn flour. Add ingredients to WildSide or Basic blender pitcher* in the order listed above and secure lid. Press the “Speed up” button until it reaches speed 6. Allow the blender to run for 30 seconds or until the batter is mixed. Press the “Pulse” button to stop. Pour batter into a greased 4-1/2” x 8-1/2” loaf pan. Bake for 40 minutes or until golden brown.

*This recipe may be adapted to make in a mixer if you do not own a Blendtec blender. Add ingredients to mixing bowl in the above order. Mix on medium speed for 1 minute or until the batter is mixed.
