Preheat oven to 350°F.
Add flour, baking soda, salt, cinnamon, cloves, ground ginger, and brown sugar to FourSide or WildSide jar and secure lid. Press "Pulse" 2–4 times to mix ingredients. Pour into bowl.
Add apple, molasses, almonds, water, and quinoa to jar. Secure lid and select "Whole Juice." Use spatula to push contents to bottom of jar. Add ½ of dry ingredients to jar and secure lid. Pulse 4–6 times. Add remaining dry ingredients to jar. Secure lid and pulse 8–10 times. Use spatula to fold mixture from top to bottom.
Line cookie sheet with parchment paper, and spoon tablespoon-sized dough balls onto cookie sheet. Gently flatten cookies with hand to achieve desired shape. Bake for 7–9 minutes. Let cookies cool on cookie sheet for 5 minutes; then, transfer to cooling rack.
