There’s only one thing that I love more than smoothies–smoothie bowls! Smoothie bowls are a great (and fun) way to get all your nutrients in at once and start the day feeling energized by a wholesome meal packed with superfoods. I love experimenting with smoothies using frozen acai and pitaya (dragonfruit) packs as the base, often adding leafy greens and avocado into my fruit bowls. Sounds a bit crazy? Trust me, you won’t taste either the greens or the avocado, but the benefits are immense! This tropical creation with pineapple, avocado, spinach and pitaya was creamy, refreshing, and nutritious. On top of everything, it’s gluten free, dairy free, sugar free, and raw vegan!
Ingredients (makes two smoothie bowls):
1 ripe banana
1/2 cup pineapple, chopped in 1 inch cubes
1/2 cup frozen strawberries
1/2 cup spinach
1 dragonfruit smoothie pack (I used Pitaya Plus)
1/4 cup aloe vera juice
2/3 cup almond milk or coconut water (I used Califia Farms unsweetened almond milk)
Put everything in your Blendtec blender and blend on high speed until creamy. Then pour into bowls, and top with banana, blackberries, pecans (or other nuts of choice), goji berries, and a strawberry.
