What would a Cinco de Mayo party be without an ice cold margarita or piña colada? To make these traditional Cinco de Mayo drinks colder and more refreshing than ever, we added a twist by turning them into ice pops. They’re great for a summer party and can be made with or without alcohol. Use your imagination and try different fruit combinations to wow your family and friends.
½ c mango yogurt
¼ c ripe mango
1½ oz orange juice
3 tbsp lime juice
½ tbsp agave nectar
1½ oz tequila*
½ oz triple sec*
berries or other fruit (optional)
Add all ingredients but optional fruit to FourSide jar in order listed. Secure lid and select “Smoothie.” Pour mixture into ice pop molds, filling ¾ full. If desired, add optional fruit, dividing evenly among molds. Freeze ice pops until solid. Makes four 3-ounce ice pops.
*For an alcohol-free version, substitute 1½ ounces water for tequila and ¼ teaspoon orange extract for triple sec.
¾ c cream of coconut
1 c fresh pineapple chunks, divided
4 oz light rum*
2½ c ice
¼ c fresh, flaked coconut
1 tbsp lime zest
Add cream of coconut, ½ cup pineapple, rum, and ice to FourSide jar in order listed. Secure lid and select “Ice Crush.” Pour mixture into ice pop molds, filling ¾ full. Mix together remaining pineapple, coconut flakes, and lime zest, and add to molds. Freeze ice pops until solid. Makes eight 3-ounce ice pops.
*For an alcohol-free version, substitute 4 ounces skim milk or coconut milk for rum.
